Pierogies

Ingredients:

Dough:

6 Cups of Flour
2 Cups of Cold Water divided
2 Eggs
6 Tablespoons of Oil
2 teaspoons of Salt

Filling:

3 Pounds of Potatoes
1 Onion, finely diced
⅓ Cup of Butter
4 Cups of Cheese

Step 1:
Combine dough ingredients and let sit 30 minutes to an hour
Step 2:
Boil the potatoes and sauté the onion in 1 Tablespoon of butter
Step 3:
Mix the filling ingredients together
Step 4:
Roll out dough and cut out 3 circles
Step 5:
Place 1½ Tablespoons of filling in circle, fold over and crease edges with a fork
Step 6:
Boil perogies until they float
Step 7:
Can eat as is or fry in some butter till brown and crispy
Step 8:
Enjoy with sauce or salsa and sour cream
